Just yesterday my friends and I were at our somewhat-weekly get together when the discussion of lunches came up. Isn’t lunch just the afterthought meal of the day? My friend admitted she often struggled to make herself anything descent to eat with all the kids and distractions and we all sympathized. Lunch gets a bad rap.
When Thai Kitchen Canada recently contacted me about recreating a meal from their Thai Kitchen #TKEveryday recipe challenge I was thrilled to find out I would be recreating this super easy Steak Thai Summer Salad which was created by Kristen Paskus of the popular blog My 3 Little Kittens. Thrilled because it was easy and something new. And it involved fish sauce. See, I’ve always been a little bit afraid of fish sauce. It was time to get over my fear of this chef favourite ingredient.
As I knew I would have my four-month-old son in tow and it would just be myself I scaled down this recipe by using only one steak. I also just used a pre-boxed lettuce mix for ease. I tried to find one with kale, which is a bit hardier, to stand up to the steak but it was unavailable. Instead I had one with radicchio, spinach, and other greens I never remember the name of.
I allowed the steak to marinate in the Thai Kitchen fish sauce while I did some baby stuff with my son. I seared the steak in a hot pan on the stove to brown it and then afterwards added the marinade of fish sauce. A couple smears of red curry paste on either side, was followed by a quick broil in the oven. I then deglazed the pan with some water to make the dressing.
I threw some of the lettuce in a bowl, topped with the steak, deglazed pan juices and… it was great! I mean, I figured it would be good since it made it through to the final of the #TKEveryday challenge but it was really nice and easy.
A lovely little meal to treat ourselves!
