Easy Apple Loaf Cake with a Twist

- Streusel
- 120g flour
- 110g light brown sugar
- 114g butter, melted
- 2 tsp ground cinnamon
- Cake
- 240g flour
- 170g sugar
- 2 tsp baking powder
- ½ tsp salt
- 2 eggs
- 114g butter, melted
- 2 medium granny smith apples, peeled, cored, and cut into 1cm dice
- Heat oven to 350F
- Butter a 9 x 5 x 3" loaf pan and line with parchment paper for easy removal of the loaf
- Streusel: Combine ingredients and set aside
- Cake: Combine flour, sugar, baking powder and salt in a bowl until well mixed.
- Beat eggs with a fork in a separate bowl until blended. Add the butter and milk and mix until combined.
- Stir wet ingredients into dry ingredients until just moistened. Add most of the apples reserving about ¼ cup.
- Spoon half the batter into the prepared tin. Sprinkle half the streusel.
- Spoon the rest of the batter in and sprinkle top with the rest of the apples and the streusel.
- Bake 1 hour 10 minutes to 1 hour 20 minutes or until a wooden skewer comes out clean.
- Let cool on work rack for 10 minutes than pull out of the tin using the parchment paper and let cool on wire rack completely.
