I had the opportunity to be invited to Maison Christian Faure, a new pastry boutique and school located in Old Montreal. I was lucky enough to be able to watch the master, Chef Faure, demonstrate a wonderful Hot Chocolate Soufflé.
I also tried a few items from their ‘Snacking Chic’ menu including the above brioche pain perdu with a wonderful caramel sauce that had some guests sipping it straight up.
The pastries were fantastic, and everything is made in house. The bakery counter offers a window as to the type of pastries and viennoiseries that you can learn about in the pastry school. The pastry school is for professionals or serious amateurs, but there’s also a Pastry Passion Night which is a type of speed dating/networking night.
The school is located in an historic building on Place Royale – the earliest settlement in Montreal. This place would be great for those seriously wanting to learn about making pastry. But it’s also a fantastic bet for locals in the area, or tourists wanting to try some authentic French pastries. It’s beautiful and delicious!
