Hilary from the fantastic Montreal-based food blog Cocoa Bean, the Vegetable, has agreed to share with us one of her favourite Christmas recipes. I love the fact that it’s so easy and adds a little something special to your typical shortbread recipe.

I am a big fan of shortbread, but often when nestled next to other wonderful treats during the holiday season its simplicity makes it the last lonely cookie on the plate. We’ve revamped this buttery holiday treat by adding vanilla and cardamom to make it command attention with its scent and wonderful flavour, but also retain the discrete elegance with its characteristic crumb.
This recipe is quick to throw together and is made entirely in the food processor. The results will surely please any house guest, and would also make a fabulous last-minute gift for neighbours or work colleagues. See if you can taste the secret to the wonderful texture of this shortbread: ground almonds!
