Easter is coming up and I wanted to do something to celebrate but it had to be easy and I didn’t want it to involve a ton of sugar. I remembered seeing a post on Frozen Blueberry Yoghurt Bark and wondered if I could do something simple with yoghurt. SIMPLE.
Just by chance, a friend had given me a bunch of yoghurt tubes which I remembered were soft pastel colours – perfect for Easter. I had a bunch of Easter themed cookie cutters my mom had given me a while back and well.. I put two and two together… literally.
I layed a piece of wax paper on a baking sheet, placed the cutters on top and filled with about a tube of yoghurt each. The yoghurt was thick enough that I could decorate with bits of fruit right away and it didn’t sink into the yoghurt.
I used mini chocolate chips for eyes and random pieces of strawberries, raspberries and blueberries for a little artistic flourish.
It turned out really well. Not only was it easy, it’s a healthy alternative to all those chocolate eggs out there. It would also make a great toddler craft!
And I’m wondering if anyone else there is secretly dreading the Easter Egg Hunt? My little one is addicted to chocolate and he asked for ‘eggs’ for six months after Easter. I feel like he’s finally just forgotten about the chocolate eggs and it’s back again. Any tips or ideas on how to deal with this?
This is a great idea! I’m going to try getting a stick into them somehow too (the three and one year olds will have yogurt all over everything otherwise).
I’ve got no solution for the eggs either 🙁 I usually just put them up on a high shelf in the cupboard, and they tend to forget about them. They’re older now too though, so that might not work any more. Good luck with the sugar rush 😉
Sticks are such a good idea! I was wondering how messy it would be to eat.. such a good option!
